Eggless Challah Bread

This is one of my favorite bread recipes for any time of year, but if you’re visiting family for the Jewish holidays (or hosting a vegan at the family meal), hopefully this recipe will be helpful for your Hanukkah spread.

Traditional Challah bread is made with eggs from chickens, but this vegan recipe creates a soft, delicious bread that is highly enjoyable, while also being egg-free.

If you have a breadmaker, you can prepare the dough in the machine, then remove it for the braiding and baking (see directions below). You can also add a cup of golden raisins or sultanas to the dough just before shaping.

Eggless Challah Bread
yields 1 loaf (or 2 small loaves)



2 tsp. active dry yeast
1/4 cup warm water
2 Tbsp. sweetener
2 1/2 tsp. powdered egg replacer mixed with 1 cup water
2 tsp. sea salt
1/4 cup oil
4 1/2 cups whole wheat pastry flour, sifted


Topping
2 Tbsp. poppy seeds (optional)

To make dough with a bread maker, do so according to your machine’s directions. The water should go in first and the yeast last to keep it dry. Begin here at step 4.

1.  Dissolve yeast with sweetener in warm water (not hot) and let sit for at least 15 minutes in a warm place until yeast bubbles and is doubled in size.
2.  Mix egg replacer with water in a bowl and add risen yeast along with sea salt and oil. Add flour slowly to the wet mixture and mix together well. Place on a floured board and knead for 10 minutes, adding flour as needed. Dough should be smooth and elastic yet not sticky. Cover and let rise for 1 1/2 hours, then punch down.
3.  Divide the dough into thirds making three equal ropes. Pinch together at one end and braid together. Pinch at the other end to secure the braid. Let rise until doubled in size (about 45 minutes). Brush lightly with oil and sprinkle poppy seeds on top.
4.  Bake in a pre-heated oven at 350° for 25 minutes until golden-brown.

Pasta With Pesto Potatoes And Beans

1 cup fresh pesto, homemade or store bought
6 new potatoes, boiled and halved or use small red
potatoes
1 cup young green beans, blanched, and refreshed
1 pound your favorite pasta

Bring 6 quarts of water to a boil and add 2
tablespoons salt.
Place pesto, potatoes and beans in a 12-inch to
14-inch saute pan and set aside.
Cook pasta according to package instructions until "al
dente" and drain. Add pasta to pan, place over medium
heat and toss until warm through. Pour into warmed
serving dish and serve. Yields 4 servings.

Italian-Style Baked Tofu

Italian-Style Baked Tofu

1 lb. firm tofu (500 grams) slice 1/2 "
thick (low-fat tofu can be used)
2 large onions, sliced
1 c. mushrooms, sliced
1/2 of a red peper, chopped
1/2 of a green pepper, chopped
2 1/2 c. vegetarian spaghetti sauce

Place sliced tofu between layers of paper towelling on a plate.
Top with another plate. Weight it down with cans and let drain
for 20 minutes. Preheat oven to 400 degrees F. Spray a
9" x 13" casserole with non-stick spray. Place vegetables in
the bottom of the dish. Add half of sauce and mix well.
Place tofu on top of vegetable mixture. Top with remaining sauce.
Bake uncovered for 40 to 45 minutes, basting once or twice during
cooking.

Serve over pasta. Reheats well. Do not freeze.

I am not comfortable with raw onions, so I sauteed them for
a few minutes just to soften them - but they probably would
have come out soft anyway.

It's not a vegetarian cookbook but she has some lovely vegetarian
dishes. I made this on the weekend. It was delicious. My partner
who says he will never eat tofu, ate it and loved it.

Sri Lanka Aluwa

Sri Lanka Aluwa

1 1/2 cups sugar
1 1/2 cups milk
14 1/2 oz. can sweetened condensed milk
4 ozs. butter
1 cup cooked mashed potato
1 cup finely chopped cashewnuts
2 tablespoons rose water
1 teaspoon ground cardamom

Put sugar, milk, condensed milk and ghee into a large
heated non-stick saucepan. Cook over medium heat,
stirring constantly, until mixture reaches soft ball
stage or 240 degrees on a candy thermometer. (To test
for softball stage, drop a little into a cup of ice
cold water. If it firms enough to be molded into a
soft ball. it has reached the required temperature.)
Remove from heat, add smoothly mashed potato and beat
with a rotary beater until all lumps are beaten out.
If using a pan with non-stick lining, pour mixture
into a bowl before doing this or the metal beaters
will scratch the non stick surface. Return to heat and
cook to soft ball stage or 116°C (240°F) once more.
Remove from heat, stir in nuts, rose water and
cardamom and mix well. Pour into a well buttered
shallow dish or baking tin. Press lightly with a piece
of buttered banana leaf or plastic wrap to smooth and
flatten the surface. Allow to cool and set, then cut
into diamond shapes, and offer.

Grains and Things Porridge

Vegetarian-Vegan Friendly Breakfast is my most important meal so I try to include as much good for me things as I can all at once. I'm having this for breakfast this morning and it is yummy The ingredients are all organic.

Grains and Things Porridge

3 cups water
1/2 cup polenta
1/2 cup whole oats
1 small apple chopped
1 Tab. raisins
1 Tab. coconut
2 Tab.chopped pecans
dash of sea salt

Place all ingredients in a med. size pan and bring to a boil stirring
constantly. Reduce heat and continue cooking for apx. 10 min.
You can add soy or rice milk to make it your preferred consistency.

sweet potato wedges

My sis made these on Thanksgiving, they were really good. I wouldn't make them just for Thanksgiving though. And I probably won't peel the potatoes.

SWEET POTATO WEDGES

INGREDIENTS
5 large sweet potatoes, peeled
½ C teriyaki sauce
¼ C orange marmalade
½ t salt
½ t ground ginger
1 t cinnamon
¼ t nutmeg
¼ t cloves
½ C pecans, toasted & chopped

Directions

Preheat the oven to 375 degrees. Lightly oil a large baking sheet with
sides. Cut the sweet potatoes into desired size wedges. You can microwave them first so they are easier to cut.

In a large mixing bowl, whisk together the teriyaki sauce, orange marmalade, and spices. Add the sweet potato wedges and toss to evenly coat with the mixture. Transfer the sweet potatoes to the baking sheet, scraping all the sauce in the bowl onto the sheet with them.

Bake until the sweet potatoes are tender, but not so soft they fall apart. Start checking them after 40 minutes.

When done, transfer to a serving bowl. Sprinkle with pecans before serving.

Mjedara:Lebanese lentils and rice

Found this in a newspaper a few years ago and I just love it.

Mjedara (Lebanese lentils and rice)

1 1/2 cups (375 mL) brown or green lentils, rinsed
3 cups (750 mL) water
1 1/4 cups (300 mL) short-grain rice
(I use calrose and some people use arborio rice)
1/4 cup (50 mL) olive oil
1 small onion, chopped

In a medium saucepan, conbine lentils and water and bring to a boil over medium-
high heat. Add rice and lower heat. Cover and simmer for 10 minutes, stirring
occasionally so the rice does not stick to the bottom of the pan. Meanwhile, heat
oil in heavy frying pan and cook onions until soft but not browned. Add onion
mixture to the lentil mixture and simmer, uncovered, untill all water has been
absorbed and rice and lentils are tender, about 5 mintues. Add more water if mixture
dries out before rice and lentils are tender.

(Cumin is sometimes added, about half a teaspoon (2mL) for this quantity.

Serve with a Lebanese cucumber and tomato salad (I don't have the recipe for
this).
